I was in a frazzle at work yesterday because I found out the party I was going to that night was a potluck. What can I make in 15 minutes that is cheap, healthy, and quick? Coleslaw.

I was debating on getting a whole cabbage and shredding it along with the carrots but when I got to the grocery store I noticed a bag of coleslaw mix is $1.99 or the cabbage is $1.69. Really how much hassle will that 30 cents save me – ALOT! I checked out the coleslaw dressing and it was $2.59 with loads of sodium and lists of additives. I think this is something I can whip up quick and easy.

The dressing was inspired by ifood.tv but the rest was kind of a big bag of adding my own flair (and veggies I already had in the fridge)

Quick Low-Fat Zesty Coleslaw

Serves: 6
  • 1 package of coleslaw mix (red/green cabbage and carrot)
  • 1 green onion (diced)
  • ½ head of broccoli (chopped small)
  • ¼ cup low fat mayo
  • 1 tbsp vinegar
  • 2 tsp sugar
  • ½ tsp salt
  • 1 tsp celery salt
  • dash of lemon juice
  1. Combine veggies in one bowl and mix dressing (mayo, vinegar, sugar, salt, celery salt)
  2. When coleslaw is mixed, add a dash of lemon juice.
Because there is alot of flavor and zest in the dressing, green onion and lemon juice, you don't need to load this coleslaw up with dressing. It's light, zippy and satisfying.
