This is the first Indian recipe I have ever attempted and perhaps first times a charm is the word because it tasted exactly like the takeout I had the week before. I skimped on the fresh herbs using ground so this would probably make another world of difference in taste.

You would never search Baingan Bharta out of the blue unless you knew what you were looking for. And if you did search it you would see the pictures and think what the heck is that. But it SO good!

  • 1 large eggplant (cooked and peeled)
  • 2 medium tomatoes (chopped)
  • ½ cup green/red bell pepper (chopped)
  • 1 green chili
  • ½ inch ginger piece or 1 tsp ground
  • 3 tbsp oil
  • 1 tsp coriander powder
  • 1 tsp cumin
  • ½ tsp tumeric
  • ½ tsp red chili flakes
  • 2 tbsp cilantro or parsley (chopped)
  1. Cook whole eggplant in microwave for 8-10 minutes. Let cool, peel off skin and cop into small pieces. Blend the tomatoes, ginger and red chili, separately.
  2. Heat oil in a saucepan on medium high and stir fry the bell peppers (about a minute). Take out of pan and set aside.
  3. Add tomato puree and spices, cooking for a few minutes.
  4. Add eggplant, cooking on medium heat, stirring and mashing as it cooks. Cook for about 8-10 minutes.
  5. Add bell pepper and cilantro to eggplant and continue to cook until soft.
Serve it over basmati rice or with naan bread.
