We just got back from vacation on Saturday and have get to do groceries. Our home cooked meals have consisted of oatmeal so far. We were going to go out to do some groceries this afternoon but it slipped away from us. So let’s look at the freezer….

I wanted to make this Fish Fillets Dijonnaise recipe from my Canadian Living cookbook but we had no yogurt, mayo or dijon..hmm… So dinner tonight is inspired by the photo of the meal.

Breaded Lemon Thyme Haddock

Ingredients
  • 4 piece of haddock (or any white fish)
  • ½ cup Italian style bread crumbs
  • 1 tbsp garlic
  • ¼ lemon - juiced and grated
  • 1 tsp lime juice
  • 1 tsp dried thyme
  • 1 tsp cayenne pepper
Instructions
  1. Combine the breadcrumbs, juice and herbs in a large ziploc bag or a wide flat bowl.
  2. Coat the fish and bake on a foiled cookie sheet at 400 for 12-15 minutes.
  3. Serve with veggies, salad or roasted potatoes.
