I LOVE this soup! I actually follow the recipe on this one because it is SO good. It’s hearty and packed with a good balance of spice, veggies and carbs. As a side weight loss tip, to promote digestion and fat-burning it is best to avoid mixing too much protein with carbs. Give your body a break by eating these nutrients separately.

Ingredients
  • 1 onion
  • 2 garlic cloves (minced)
  • 1 jalapeno pepper (oe ½ if you don’t have taste buds of steel)
  • dash salt/pepper/chilli powder
  • 2 carrots (chopped)
  • ¼ cup long grain rice
  • 4 cups water
  • 1 can diced tomatoes
  • 1 tbsp lime juice
  • 2 cups spinach
Instructions
  1. In large-medium saucepan saute onion, garlic, jalapeno and spice. Add carrots, rice, water and tomatoes bringing to a boil. Let simmer for 20 minutes. Add in spinach and lime juice, cooking 2 more minutes until soft.
  2. REALLY spicy! But delicious.
