I am a cookbook-aholic. When I go to the library, I rent about 5 at a time, taking my time to look carefully at all the recipes.

I am pretty dedicated that I even carry post it notes in my purse so I can tag the pages I like to copy down later. Oh ya – there is a process to this. I scan all of the recipes that I tag and have them saved in a folder on my laptop. Right now I have over 500 recipes waiting for me to try.

However, with all of these recipes, every time I make a new soup, salad or meal – I don’t even listen to the recipe. What is that all about? I do however listen to baking instructions as I have walked the line a couple times and muffed it up hard.

This lentil soup was meant to be simple but has been corrupted by Jenny and her crave for flavour (aka spice, herbs, fresh produce and chili sauce). I think it’s the best soup I have ever made!

So Good Lentil Soup

Recipe type: Soup
Serves: 5-6
  • 2 tbsp olive oil
  • 3 celery stalks (including leaves)
  • 2 carrots (diced)
  • 1 onion (chopped)
  • Big dallop of garlic
  • 8 cups water
  • ½ cup chili sauce (this is the stuff your grandma makes)
  • 2 tomatoes (diced)
  • 2 cups dry lentils
  • toss of dried herbs (parsley, oregano, thyme)
  • toss of cumin, paprika and cayenne
  • dash of salt/pepper
  1. In a large saucepan, saute the celery, carrots, onion and garlic in olive oil for about 3 minutes. Add remaining ingredients, bring to a boil and simmer for about an hour.
  2. The combination of chili sauce and spice is SOOO good. Bon Appetit!
