This is the perfect salad for summer. Tomatoes, basil and parsley are straight from the garden. All you need is to pull the chickpeas, olive oil and red wine vinegar from the pantry. Very refreshing and boyfriend-approved! Great for lunches, pot luck, and addition to  dinner.

Ingredients
  • Two 15oz cans chickpeas
  • 4 tbsp red wine vinegar (divided)
  • 3 tsp lemon juice (divided)
  • 1 large tomato (diced)
  • ½ chopped onion (diced)
  • ½ cup fresh basil (chopped)
  • ¼ cup fresh parsley (chopped)
  • ¼ cup olive oil
  • 1 tbsp sugar
  • salt/pepper
Instructions
  1. Marinate chickpeas in ½ red wine vinegar and olive oil while you chop the veggies. Add the chopped tomatoes, onion, basil and parsley. Whisk 3 tbsp of vinegar with lemon juice, and sugar.
Notes
Wait 1-2 hours before serving for maximum flavor.
