Last night I dreamt about making broccoli soup…random I know… So I decided to whip up a batch this morning. With a huge bag of precut broccoli from Costco, this soup took less than 20 minutes to make.

  • 2 tsp butter
  • 2 tsp oil
  • 1 onion chopped
  • 1 celery stalk chopped
  • 4 garlic cloves chopped
  • 2 tbsp fresh parsley chopped
  • 1 jalapeño pepper chopped
  • 6 cups broccoli
  • 1 carton vegetable stock
  • 1 cup water
  • Salt/pepper
  1. Add oil and butter to large pot to melt. Add chopped onions and celery to soften for about 5 minutes. Add garlic, parsley and jalapeño to fragrant for 1 minute.
  2. Add broccoli, vegetable stock and water to simmer for 10 minutes or until broccoli is soft.
  3. Add soup to blender in batches, adding your salt and pepper for seasoning. Blend until smooth. Repeat until all soup is puréed.
This is one way to get a great serving of greens in your day, which helps provide an alkaline balance to your body and eliminate toxins. Broccoli is great source of good source of Protein, Calcium, Iron, Magnesium, Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, and Vitamin B6.

Enjoy a big bowl of soup with some crackers and cheese or sandwich.
