A hot trend in nutrition right now is Meatless Monday’s. By eating meatless one day a week, you can decrease your risk of preventable health problems and your carbon footprint. Read more great benefits of meatless monday’s.

A challenge in some families (who are meat eaters) is finding a well balanced and filling meal that doesn’t contain meat. Here are a few of my favourite meatless meals that are easy to make, satisfying and great alternatives to their meat versions.

The Recipes for a Month of Meatless Monday’s

  1. Roasted Vegetable Lasagna (make two and add one to the freezer for a future meal in a crunch)
  2. Vegetarian Chili (great to throw in the crockpot to cook on low all day when you are at work)
  3. Portobello Mushroom Burgers (have fun experimenting with different toppings)
  4. Crustless Broccoli Cheese Quiche (so quick to assemble! meal in 30 minutes or less)
