Refreshing salad idea. Eat this delicious bean salad on its it own for a super dose of fibre, iron, vitamin C and protein or throw over lettuce to make a nutrient packed quick salad.

Ingredients
  • 2 cans mixed beans, rinsed
  • 1 red pepper, diced
  • 1 green pepper, diced
  • ½ broccoli, diced
  • ¼ cup vinegar
  • ¼ cup grapeseed or olive oil
  • 1 tbsp sugar
Instructions
  1. Combine all ingredients and let cool in fridge for 1 hour for best taste.
