Oh So Good Carrot Ginger Soup (Low Fat and Vegan!)

  • 6-8 large carrots (peeled and chopped)
  • 1 onion chopped
  • 4 cups (1 carton) vegetable stock
  • ½ cup (1/2 can) coconut milk
  • juice 1 orange
  • 1 tsp fresh ginger minced
  • 1 tsp cumin
  • 1 tsp curry powder
  • salt to taste
  1. Add all ingredients to a large pot and bring to a boil. Reduce heat and simmer until carrots are soft. When done transfer to a blender and blend until smooth. Yum yum for your tummy.
