Spinach, Beet and Goat Cheese Salad

  • 4 cups Organic Mixed Greens with Spinach (organic is best when choosing leafy greens because they are on the dirty dozen list)
  • 1 cup Sliced Beets (to make your own: I take whole beets, sliced and boil in water until firm)
  • 1 cup Chopped Mushrooms
  • ½ Chopped Cucumber
  • Handful of Crushed Walnuts
  • Crumbled Goat Cheese (as much as you desire)
  1. Combine ingredients in a large bowl and enjoy. Adjust the quantity based on how many people you are serving.
  2. To make this meal a fuller meal you can add chopped chicken breast.
  3. This meal is loaded with great antioxidants and nutrients to give you a little more pep in your step.
