Rustic Vegetable Soup with Quinoa

This soup contains great protein for body building, medicinal properties of mushrooms, vitamin A which is great for young looking skin, and immune booster power of onions and garlic.

Ingredients
2 onions diced
4 carrots chopped
2 celery stalks chopped
½ cup leeks chopped
2 zucchini chopped
2 cups mushrooms
1 tbsp minced garlic
¼ cup quinoa
4 cups vegetable stock
Salt/pepper
Instructions
Sauté onions and garlic until browned. Soak quinoa in water for 3-4 minutes and rinse. Add remaining ingredients to the pot. Boil and summer for 30 minute until all vegetables are soft.
