So Good Lentil Soup

Serves: 5-6
  • 2 tbsp olive oil
  • 3 celery stalks (including leaves)
  • 2 carrots (diced)
  • 1 onion (chopped)
  • Big dallop of garlic
  • 8 cups water
  • ½ cup chili sauce (this is the stuff your grandma makes)
  • 2 tomatoes (diced)
  • 2 cups dry lentils
  • toss of dried herbs (parsley, oregano, thyme)
  • toss of cumin, paprika and cayenne
  • dash of salt/pepper
  1. In a large saucepan, saute the celery, carrots, onion and garlic in olive oil for about 3 minutes. Add remaining ingredients, bring to a boil and simmer for about an hour.
  2. The combination of chili sauce and spice is SOOO good. Bon Appetit!
