Summer Chickpea Salad

Ingredients
  • Two 15oz cans chickpeas
  • 4 tbsp red wine vinegar (divided)
  • 3 tsp lemon juice (divided)
  • 1 large tomato (diced)
  • ½ chopped onion (diced)
  • ½ cup fresh basil (chopped)
  • ¼ cup fresh parsley (chopped)
  • ¼ cup olive oil
  • 1 tbsp sugar
  • salt/pepper
Instructions
  1. Marinate chickpeas in ½ red wine vinegar and olive oil while you chop the veggies. Add the chopped tomatoes, onion, basil and parsley. Whisk 3 tbsp of vinegar with lemon juice, and sugar.
Notes
Wait 1-2 hours before serving for maximum flavor.
